Spinach Love

Ever since watching Popeye the Sailor Man, I’ve loved spinach. My mum used to cook it all the time and I have found myself eating bags of the stuff everyday. I love how versatile, healthy and easy it is. Since kale (spinach’s ugly sister) has become more and more popular, I’ve noticed spinach has fallen from the spotlight a little. So I’ve written this post to proclaim my love for this super vegetable and encourage everyone to eat as much spinach as they can.

Things I do with spinach

1. Firstly, I buy a bag of washed baby spinach. I know the packaging is kind of annoying, but it means that I will eat it because I don’t want it taking up all the room in my tiny fridge! They are really cheap in England at about £1 per bag. I go through at least one a day, sometimes two on the weekend.

2. Add it to everything. I mean everything. Soups, omelettes, curries, stews, casseroles, stir-fries, smoothies… it makes everything better

3. Eat it raw in a salad instead of lettuce. The darker leaves means that it has more nutrients and I prefer the texture anyway.

4. I freeze leftover spinach to make pesto with pine nuts and olive oil.

5. I also combine it with ricotta cheese and have it on toast for breakfast (it needs to be cooked first though).
